Nattie and Dad were hungry. They chopped peppers and onions because they wanted to make delicious stuffed pepper casserole. They put the meat in the pan first and then the onions. They fried it up! The house began to smell tasty.
After the meat browned up, they then added the beef broth, tomatoes and green chili’s along with the rice and cooked them for five minutes more. They placed the cheese atop the meat and rice and then baked it at 350 degrees for 20 more minutes.
When the oven chime alerted to the end of baking, everyone jumped up to fill their bowls. Spoon after spoon loaded the delectable delight into each person’s bowl. Now only about an eighth of what was once a loaded casserole dish left to eat. The fam loved this dish. Glad to satisfy their hunger. Nice that someone else cleaned up tonight too!
